  • 1 tablespoon Cajun seasoning to amp up the spice
  • 6 cups chicken broth the flavorful base
  • 14.5 ounce can diced tomatoes optional, for added texture
  • 1 tablespoon Worcestershire sauce gluten-free available

For the Pasta and Cream

  • 8 ounces pasta (like ditalini or shells, choose gluten-free if needed)
  • 1/2 cup heavy/whipping cream optional for silkiness
  • 1/3 cup Parmigiano Reggiano, grated for cheesiness
  • 1 tablespoon lemon juice optional, for brightness
  • 2 tablespoons parsley, chopped for freshness
  • 2 green onions thinly sliced for garnish

Instructions
 

Sauté the Chicken

  • Begin by heating the oil in a large saucepan over medium-high heat. Add the chicken that you’ve seasoned with Cajun seasoning, cooking until each piece is beautifully golden brown, about 2-4 minutes per side. Once cooked, set aside to keep warm.

Cook the Veggies

  • In the same saucepan, melt the butter before adding the diced onion, celery, and bell pepper. Cook the vegetables until they are tender, about 5-7 minutes, allowing their natural sweetness to come out.

Add Aromatics and Liquid

  • Incorporate the chopped garlic, thyme, and an additional tablespoon of Cajun seasoning, cooking for about 1 minute until the garlic is fragrant. Pour in the chicken broth and add the cooked chicken, diced tomatoes, Worcestershire sauce, and pasta. Stir everything together, ensuring the pasta is submerged.

Simmer to Perfection

  • Bring the mixture to a gentle boil, then reduce the heat and let it simmer until the pasta reaches the desired tenderness, approximately 7 minutes. Once done, remove the chicken, slice or shred it, and return it to the pot.

Finish the Dish

  • Turn off the heat and stir in the heavy cream and grated Parmesan cheese until the cheese melts into the sauce, creating heavenly creaminess. You can add lemon juice for an extra zing if desired. Finish by mixing in the parsley and green onions, adjusting the seasoning with cayenne, salt, and pepper to taste.

Notes

For an even deeper flavor, marinate the chicken pieces in Cajun seasoning and olive oil for a couple of hours before cooking. If Parmesan isn’t available, feel free to substitute it with mozzarella or cheddar. Experiment with adding spinach, mushrooms, or zucchini for added nutrition and flavor! For a lighter version, you can also use Greek yogurt instead of heavy cream. Store leftovers in an airtight container in the refrigerator for about 3-4 days.
