Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  • In a large mixing bowl, combine the white rice and chicken broth. Pour this mixture into the prepared baking dish.

Cooking Chicken

  • In a skillet, cook the chicken pieces over medium-high heat until no longer pink.
  • Add the frozen peas and carrots, diced onion, diced celery, and diced bell pepper. Cook for an additional 2-3 minutes.

Creamy Mixture

  • In a bowl, mix mayonnaise, sour cream, salt, black pepper, garlic powder, and paprika.
  • Pour the mayonnaise mixture over the cooked chicken and vegetables and stir gently until combined.

Assembly

  • Spread the chicken and vegetable mixture evenly over the rice in the baking dish.
  • Sprinkle the cheddar and Parmesan cheese on top.

Baking

  • Cover the baking dish with aluminum foil and bake for 30 minutes.
  • Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.

Notes

For richer flavor, use homemade chicken broth. Add fresh herbs right before serving. For a crunchier texture, mix breadcrumbs with melted butter on top during the last 10 minutes of baking.
