Ingredients

Pasta and Main Ingredients

  • 9 ounces cheese tortellini Enriched with delightful cheesy flavors and pops of texture.
  • 1 tablespoon butter To add richness and a silky finish.
  • 1/4 cup finely minced onion For sweetness and depth.
  • 3 cloves garlic, finely minced Essential for that aromatic, savory flavor.
  • 1 1/2 cups chicken stock The base for our creamy sauce.
  • 1/2 cup heavy cream For an indulgently thick and creamy texture.
  • 4 ounces cream cheese, cut into cubes To give the sauce its creamy consistency.
  • 1 lb shrimp Vibrant and juicy, the star of the dish.
  • 3 ounces baby spinach For freshness and a pop of color.
  • 1 zest and juice from lemon To brighten up the dish.
  • Sea salt and pepper To enhance all the flavors beautifully.

Instructions

Preparation

  • Begin by putting a large pot of salted water on high heat. As you wait for the pot to boil, prep the other ingredients.
  • Once the water is boiling, add the tortellini and cook according to the package directions, typically around 6-8 minutes. Drain the tortellini and set it aside.

Sauce Making

  • In a large frying pan over medium heat, melt the butter.
  • When the butter is frothy, add the onion and garlic, cooking until the onion becomes transparent, about 3 minutes.
  • Pour in the chicken stock, heavy cream, and cream cheese. Bring the mixture to a gentle simmer, stirring constantly until the cream cheese has melted and blended into the sauce.

Cooking

  • Add the shrimp to the pan and let them cook for about 2 minutes, or until they turn pink and opaque.
  • Toss in the baby spinach, allowing it to wilt for about 1 minute.
  • Stir in the cooked tortellini, along with the lemon zest and juice. Season the dish with salt and pepper to taste.

Notes

For the best results, use fresh shrimp. If using frozen shrimp, allow them to thaw and pat them dry. Consider adding more cream cheese or parmesan at the end for extra creaminess. Feel free to add other vegetables like cherry tomatoes or asparagus for nutrition and color. A pinch of red pepper flakes can also give this dish a delightful kick. Make sure to taste and adjust seasoning as needed.
