Preparation

  • Pulse the shelled pistachios in a food processor until finely ground, resembling green sand. Set aside.
  • In a spacious mixing bowl, combine the softened mascarpone cheese, heavy cream, powdered sugar, and vanilla extract. Beat with a hand mixer until smooth and fluffy.
  • Gently fold in the ground pistachios until evenly distributed.

Coffee Mixture and Assembly

  • In a shallow dish, mix the cooled brewed espresso with the optional coffee liqueur.
  • Quickly dip each ladyfinger into the espresso mixture, then lay them out in a single layer in a 9x9-inch dish.
  • Spread half of the pistachio mascarpone mixture generously over the soaked ladyfingers.
  • Repeat layering with another round of dipped ladyfingers and the remaining mascarpone mixture.
  • Cover and refrigerate for a minimum of four hours, preferably overnight.

Serving

  • Dust the top with cocoa powder and garnish with chopped pistachios before serving.

Notes

Use fresh espresso for the best flavor. Handle ladyfingers with care to avoid sogginess. Avoid overbeating the cream; aim for peaks that hold shape but remain silky.
