Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Heat a tablespoon of olive oil in a large oven-safe skillet over medium-high heat.
  • Season salmon fillets generously with salt and pepper, and place them skin-side down in the skillet.
  • Cook salmon for about 4-5 minutes per side until golden and crispy.
  • Remove the salmon from the skillet and set it aside on a plate.

Cooking

  • Melt two tablespoons of butter in the same skillet over medium heat.
  • Add minced garlic and sauté for about a minute until fragrant.
  • Add chopped spinach and wilt down for 2-3 minutes.
  • Stir in chopped roasted red peppers, heavy cream, and grated Parmesan cheese, bringing the mixture to a simmer.
  • Add a squeeze of lemon juice, adjusting seasoning with salt and pepper if needed.
  • Return salmon fillets to the skillet, spooning sauce over them and transfer to oven.
  • Bake for 5-7 minutes until salmon is fully cooked and flaky.

Serving

  • Garnish with freshly chopped parsley before serving.

Notes

For a lighter version, consider using Greek yogurt instead of heavy cream. If you're looking to mix things up, various leafy greens can be used as substitutes.
