Cooking

  • Heat 1 tablespoon of olive oil in a skillet over medium heat.
  • Sear the salmon fillets for 3-4 minutes on each side until golden brown and cooked through. Remove them and set aside.
  • In the same skillet, add the remaining tablespoon of olive oil and sauté minced garlic until fragrant.
  • Stir in roasted red peppers and fresh spinach; cook until spinach wilts.
  • Reduce heat and add heavy cream, grated Parmesan, Dijon mustard, paprika, salt, and pepper. Stir until combined.
  • Return salmon fillets to the skillet, spoon sauce over them, and simmer for 2-3 minutes.
  • Serve warm, garnished with additional chopped roasted red peppers.
