Instructions
 

Preparation

  • Heat olive oil in a large skillet over medium-high heat until it shimmers.
  • Season the salmon fillets generously with salt and black pepper on both sides.
  • Carefully place the salmon fillets in the skillet, skin-side down if applicable, and sear each side for about 3-4 minutes until cooked through. Remove and set aside.

Cooking the Sauce

  • In the same skillet, add minced garlic and sauté for 1-2 minutes until fragrant.
  • Add chopped spinach and sun-dried tomatoes, cooking for another 2-3 minutes until the spinach wilts.
  • Pour in heavy cream and broth, stirring to create a sauce, and let it thicken.
  • Sprinkle in oregano and red pepper flakes (if using), seasoning with salt and black pepper to taste. Simmer for about 5 minutes.
  • Return the salmon to the skillet, basting with the sauce, and simmer for an additional 2-3 minutes.

Serving

  • Garnish with freshly chopped parsley before serving.

Notes

For maximum flavor, consider marinating the salmon fillets in lemon juice, olive oil, and herbs for 30 minutes before cooking. Substitute half of the heavy cream with cream cheese for extra creaminess. A splash of lemon juice before serving brightens flavors.
