For the filling

  • 3 packages (8 oz) cream cheese, softened The star ingredient for creaminess and flavor.
  • 1 cups sugar Essential for sweetness.
  • 1 tsp vanilla extract Infuses warmth and aroma.
  • 3 large eggs Acts as a binding agent.
  • 0.5 cups heavy cream Provides creaminess.

For the topping

  • 0.25 cups brown sugar Creates the crispy caramel layer.

Instructions
 

Preparation

  • Preheat your oven to 325°F (163°C).
  • In a medium bowl, combine graham cracker crumbs and 1/4 cup sugar.
  • Pour in melted butter and stir until mixed well and resembles wet sand.
  • Press the crumb mixture firmly into the bottom of a springform pan.
  • Bake the crust for 10 minutes and then let it cool.

Mixing the Filling

  • In a large bowl, beat softened cream cheese with 1 cup of sugar until smooth.
  • Add vanilla extract and eggs one at a time, mixing after each addition.
  • Blend in heavy cream until smooth.
  • Pour batter over the cooled crust and level it.

Baking and Cooling

  • Bake the cheesecake for 50-60 minutes until the center is set but slightly jiggly.
  • Turn off the oven and let the cheesecake cool with the door ajar for 1 hour.
  • Refrigerate for at least 4 hours or overnight.

Caramelization

  • Sprinkle brown sugar over the top and caramelize with a kitchen torch.

Notes

Allow cream cheese to soften at room temperature for easier blending. Ensure the springform pan is well greased to prevent sticking. Don't rush the cooling process in the oven to minimize cracks.
