For the sandwich

  • 2 pieces sandwich buns Choose soft, fresh buns.
  • 1/4 cup tartar sauce Adds a creamy, tangy element.

Instructions
 

Preparation

  • Heat oil in a deep, heavy pot until it reaches 350°F (175°C).
  • In a large bowl, whisk together flour, cornstarch, salt, black pepper, paprika, and garlic powder.
  • Add cold soda water to the flour mixture and stir until smooth.
  • Dip each cod fillet into the batter, ensuring it's fully coated.
  • Dredge the coated fillet in panko breadcrumbs.

Cooking

  • Gently lower the coated cod into the hot oil and fry for about 4 minutes on each side, or until golden brown and crispy.
  • Remove the cod from the oil and place it on a plate lined with paper towels to drain.

Assembly

  • Toast the sandwich buns lightly in a separate pan.
  • Spread tartar sauce on the bottom bun, then layer with lettuce, tomato, and the fried cod.
  • Top with the other half of the bun to assemble your sandwich.
