  • 1/4 cup milk
  • 2 large eggs Bind the batter.
  • 1/4 cup olive oil Enhances moisture and flavor.
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp baking powder
  • to taste Salt and pepper
  • 1/4 cup breadcrumbs For extra crunch.

Garnish

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and grease a muffin tin or line it with paper liners.
  • Grate the zucchini and potato, then squeeze out excess moisture using a clean kitchen towel.
  • In a large bowl, whisk together the eggs, milk, and olive oil.
  • Add the grated zucchini, grated potato, flour, Parmesan cheese, garlic powder, onion powder, baking powder, salt, and pepper to your wet ingredients. Stir gently until just combined.
  • Spoon the mixture into the muffin tin, filling each cup about 3/4 full. Sprinkle breadcrumbs generously on top.

Baking

  • Bake for 20-25 minutes, until the tops are golden brown and a toothpick inserted into the center comes out clean.

Serving

  • Let the muffins cool for a few minutes before removing them from the tin. Garnish with fresh parsley if desired.

Notes

To elevate the flavor, consider adding spices like paprika or red chili flakes. You can also substitute the Parmesan with mozzarella or experiment with different herbs.
