Preparation

  • Boil the Red Lentils: Start by placing 1 cup of red lentils in a medium pot and covering them with 2 cups of water. Bring to a boil over medium heat, then reduce to a simmer for about 15 minutes until the lentils are tender. Drain and set aside.
  • Cook the Sweet Potatoes: In a different pot, fill with salted water and bring it to a boil. Add the cubed sweet potatoes and cook until they are fork-tender, which takes about 10-12 minutes. Drain well and allow them to cool slightly.
  • Sauté Onion and Garlic: In a skillet, heat a splash of olive oil over medium heat. Add the diced onion and minced garlic to the pan, sautéing them for 5-7 minutes until they turn translucent and fragrant.
  • Combine Ingredients: In a large mixing bowl, mash the cooked sweet potatoes using a fork. Then, mix in the cooked lentils along with the sautéed onion and garlic, chopped herbs, cumin, paprika, salt, and pepper until everything is evenly combined.
  • Shape the Patties: With your hands, take spoonfuls of the mixture and shape them into 2-inch patties. Roll each patty in panko breadcrumbs to get that extra crunch.
  • Fry the Patties: Heat a generous layer of olive oil in a frying pan over medium heat. Fry the patties for about 3-4 minutes on each side, allowing them to turn golden brown.

Notes

To save time, you can prepare the sweet potatoes and lentils in advance. Store them in the fridge until you're ready to assemble the patties. Experiment with spices: try adding some chili powder for heat or garam masala for an exotic flavor twist. For a healthier option, bake at 400°F (200°C) for 20-25 minutes, flipping halfway through.
