  • 1.5 lbs 4 boneless, skinless chicken breasts
  • 1 cup long-grain rice
  • 2 cups water

Tzatziki Sauce Ingredients

  • 1 cup plain Greek yogurt
  • 1 medium cucumber (grated)
  • 2 tablespoons fresh dill (chopped)
  • 2 cloves garlic (minced)
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Preparation

  • Preheat your oven to 400°F (200°C) and spray a large baking dish with nonstick cooking spray.
  • Season the chicken breasts generously with salt and pepper, and gently lay them in the prepared baking dish.
  • In a mixing bowl, combine the long-grain rice, water, and a pinch of salt. Stir to blend, then pour the mixture over the seasoned chicken.
  • In another bowl, combine the Greek yogurt, grated cucumber, minced garlic, chopped dill, lemon juice, salt, and pepper to make the tzatziki sauce.
  • Spoon the tzatziki mixture generously over the chicken.

Baking

  • Cover the baking dish with aluminum foil and bake for 35-40 minutes.
  • Ensure the chicken reaches an internal temperature of 165°F before removing from the oven.
  • Allow it to sit for a few minutes before serving.

Notes

This dish can be stored in the fridge for up to 3 days. For freezing, portion the chicken, rice, and tzatziki separately for easy reheating.
