  • 2 tbsp miso paste This fermented soybean paste forms the heart of the glaze, adding depth and richness.
  • 1 tbsp olive oil Used to blend the glaze ingredients for a smooth consistency.
  • 1 tbsp maple syrup Provides natural sweetness that balances the savory elements perfectly.
  • 1 tbsp soy sauce or tamari Adds a savory saltiness that enhances the overall flavor.

Preparation

  • Preheat the oven to 400°F (205°C).
  • Cut the aubergines in half lengthwise and make criss-cross cuts in their flesh about ½ inch deep.

Baking

  • Place the halved aubergines on a baking sheet and bake for 20 minutes.
  • While they bake, combine miso paste, olive oil, maple syrup, and soy sauce in a bowl to prepare the glaze and mix until smooth.
  • Remove aubergines from the oven and generously brush them with the miso glaze.
  • Return to the oven for another 10-15 minutes or until golden and soft.

Serving

  • Serve immediately for the best taste and presentation.

Notes

To amplify the flavor, consider sprinkling sesame seeds on top before serving.
