Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the flour, baking soda, and salt.
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Beat in the egg and vanilla extract until fully incorporated.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Stir in the chocolate chips.
  • In a separate bowl, beat together the cream cheese, powdered sugar, and vanilla extract for the cheesecake filling until smooth and creamy.
  • Take a tablespoon of cookie dough, flatten it, add 1 teaspoon of cheesecake filling, and cover with another tablespoon of dough.
  • Seal the edges tightly to create a ball.
  • Place the cookie dough balls on the prepared baking sheet, spaced about 2 inches apart.
  • Bake for 10-12 minutes until edges are golden brown.
  • Let cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For smoother filling, use cold cream cheese. Make sure to pinch the edges tightly when sealing the cookies to prevent leaking. Optionally, add cinnamon or nutmeg for extra flavor, and consider drizzling melted chocolate on top for a decorative touch.
