  • 3 lbs chuck roast
  • 4 medium carrots, chopped
  • 4 medium Yukon Gold potatoes, chopped
  • 2 large sweet onions, diced
  • 4 cloves garlic, minced
  • 2 cups low-sodium beef broth For a healthier option, use low-sodium broth.
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • Salt and pepper to taste

Preparation

  • Preheat your oven to 300°F (150°C).
  • In a large Dutch oven, heat oil over medium-high heat. Sear the chuck roast until it’s beautifully browned on all sides (about 4-5 minutes per side).
  • Remove the roast from the pot and set it aside.
  • Add the onions and garlic to the pot; sauté for about 2 minutes until fragrant.
  • Return the roast to the pot and add the chopped carrots and potatoes.
  • Pour in beef broth until the roast is submerged halfway.
  • Add thyme and rosemary.
  • Cover tightly and slow-cook in the oven for 3-4 hours until fork-tender.

Notes

For healthier alternatives, consider swapping out potatoes for cauliflower. Pair with crusty bread or a refreshing salad for a complete meal.
