Ingredients

For the Marinade

  • 2 tablespoons ketchup adds a touch of sweetness
  • 3 tablespoons agave for natural sweetness
  • 4 tablespoons rice vinegar brings a tangy twist
  • 4 tablespoons canned pineapple juice for that tropical flavor
  • 1 tablespoon sesame oil adding a nutty depth
  • 2 tablespoons avocado oil or any cooking oil of your choice
  • 1 teaspoon minced ginger for a spicy zing
  • 4 cloves minced garlic enhances the dish's aromatic brilliance
  • 3 tablespoons soy sauce rounds out the flavors

For the Chicken

  • 1.0 to 1.3 lbs boneless, skinless chicken thighs

Instructions

Preparation

  • Combine the ketchup, agave, pineapple juice, rice vinegar, sesame oil, avocado oil, minced ginger, minced garlic, and soy sauce in a medium-sized bowl or zip-top bag. Stir or shake until blended.
  • Add the chicken thighs to the marinade, ensuring each piece is well coated.
  • Cover the bowl or seal the zip-top bag, then refrigerate for at least 3 hours or up to 24 hours for maximum flavor.

Cooking

  • Preheat a cast-iron skillet over medium-high heat or prepare your grill to medium heat.
  • Remove the chicken from the marinade, allowing excess marinade to drip off. Place the chicken in the skillet or on the grill.
  • Cook for about 6-8 minutes on each side, until deeply charred and the chicken is tender and juicy.

Serving

  • Serve your Easy Hawaiian Chicken with fluffy rice, your favorite vegetables, and a healthier twist on Hawaiian macaroni salad.

Notes

For a spicier kick, add crushed red pepper flakes to the marinade. Marinating overnight enhances the flavors. Use an oven to bake at 400°F for about 25 minutes during colder months.
