Instructions
 

Preparation

  • Preheat your oven to 325°F (165°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  • In a medium bowl, combine the graham cracker crumbs and melted butter. Stir until evenly coated.
  • Press the crumb mixture into the bottom of the prepared springform pan to form a crust. Bake for 10 minutes and set aside to cool.

Cheesecake Filling

  • In a large bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy.
  • Incorporate the vanilla extract and add eggs one at a time, beating well after each addition.
  • Stir in the sour cream and heavy cream until the mixture is smooth.
  • Pour the cheesecake filling over the cooled crust and spread evenly with a spatula.

Baking

  • Bake in the preheated oven for 50-60 minutes until the center is set but slightly jiggly.
  • Turn off the oven and leave the cheesecake inside to cool for an hour.
  • Refrigerate for at least 4 hours, or preferably overnight.

Serving

  • Top the cheesecake with cherry pie filling, add fresh cherries for garnish, and dollop with whipped cream.
  • Slice, serve, and enjoy!

Notes

Ensure cream cheese is at room temperature to avoid lumps. For a twist, swap cherry pie filling with blueberry or strawberry. Refrigerate leftovers for up to 5 days or freeze for up to 3 months.
