Ingredients
  

For the Crust

  • 1 1/4 cups all-purpose flour Creates a tender and flaky crust.

  • 1/2 cup shelled pistachios, finely ground Contributes a lovely nutty aroma.
  • 1/4 cup heavy cream Creates a smooth, creamy blend.
  • 1/4 cup powdered sugar For added sweetness in the filling.
  • 1 teaspoon vanilla extract Enhances the flavor of the filling.
  • 2 tablespoons unsalted butter, softened Adds richness to the filling.
  • 1/4 cup cherry jam or preserves Brings fruitiness to the tartlets.
  • Fresh cherries, pitted as needed To top the tartlets.
  • Crushed pistachios for garnish For an elegant finishing touch.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour mini tartlet pans.
  • In a food processor, combine flour and powdered sugar. Add cold butter and pulse until the mixture resembles coarse crumbs.
  • Add egg yolk and ice water. Pulse again until the dough begins to come together.
  • Flatten the dough into a disk, wrap it in plastic wrap, and chill for 30 minutes.
  • Roll out the dough on a floured surface until it’s about 1/4 inch thick. Cut into circles and press them into tartlet pans.
  • Bake for 10-12 minutes or until golden brown, then let them cool completely.

Filling

  • Pulse the pistachios until finely ground. In a bowl, blend with heavy cream, remaining powdered sugar, vanilla extract, and softened butter until smooth.
  • Spread cherry jam into the cooled crusts. Pipe or spoon the pistachio filling on top.
  • Top each tartlet with fresh cherries and crushed pistachios.

Notes

To avoid tough crusts, handle the dough minimally and ensure it is chilled. Use fresh cherries at peak ripeness for the best flavor.
