Instructions
 

Preparation

  • Sift together the almond flour, powdered sugar, and spices into a large bowl.
  • In a separate bowl, whip the egg whites until foamy, then gradually add granulated sugar until stiff peaks form.
  • Gently fold the dry mixture into the whipped egg whites.
  • Prepare a piping bag and fill it with the macaron batter, then pipe even rounds onto a lined baking sheet.
  • Allow piped macarons to stand for 30-45 minutes until dry to the touch.

Baking

  • Preheat the oven to 300°F (150°C) and bake the macarons for 14-16 minutes.
  • Allow the macarons to cool completely after baking.

Making the Filling

  • In a bowl, beat together the softened butter, powdered sugar, spices, vanilla extract, and heavy cream until smooth and fluffy.
  • Once the macarons are cooled, sandwich them with the spiced buttercream.

Creating the Caramel Drizzle

  • Melt the granulated sugar in a saucepan over medium heat, stirring gently until golden.
  • Add in the butter and stir until melted, then mix in the heavy cream along with cinnamon and nutmeg.
