  • 1 lb beef stew meat tender and juicy
  • 2 large onions thinly sliced, sweet and aromatic
  • 3 cups beef broth rich and savory
  • 1 tablespoon olive oil for sautéing
  • 2 cloves garlic minced, fragrant and zesty
  • 1 teaspoon thyme earthy and warming
  • 1 tablespoon Worcestershire sauce a flavor-packed staple
  • 8 oz egg noodles soft and comforting
  • to taste salt and pepper for seasoning
  • 1 cup shredded Swiss cheese creamy and luscious
  • to taste fresh parsley for garnish

Instructions
 

Preparation

  • Heat the olive oil in a large skillet over medium heat until shimmering.
  • Add the thinly sliced onions, stir frequently, and caramelize for 15-20 minutes until golden brown.
  • Add the minced garlic to the onions and cook for another minute.
  • In a separate pot, brown the beef stew meat for about 5 minutes until browned on all sides.
  • Add the caramelized onions, beef broth, thyme, Worcestershire sauce, salt, and pepper to the pot.
  • Bring the mixture to a gentle simmer and cook for 1 to 1.5 hours until the beef is tender.
  • Meanwhile, cook the egg noodles according to package instructions, then drain and set aside.
  • Once the beef is tender, gently stir in the cooked noodles, adjusting seasoning if necessary.
  • Sprinkle shredded Swiss cheese over the top and cover the pot to allow it to melt.
  • Garnish with fresh parsley before serving.

Notes

For best results, caramelize the onions for longer and use quality beef broth. Leftovers can be frozen and reheated.
