Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, mix together the flour, baking soda, ginger, cinnamon, cloves, and salt.
  • In another bowl, cream together the butter and brown sugar until fluffy.
  • Add the egg, molasses, and vanilla extract to the butter mixture and mix until smooth.
  • Gradually add the dry ingredients and mix until a dough forms.
  • Divide the dough in half, wrap in plastic, and chill in the refrigerator for an hour.

Baking

  • Roll out the dough on a floured surface to about 1/4 inch thickness.
  • Use cookie cutters to cut out shapes and place them on a lined baking sheet.
  • Bake for 8-10 minutes until golden and aromatic.
  • Cool on a wire rack before decorating.

Making Royal Icing

  • Beat the egg whites until frothy.
  • Gradually add the powdered sugar and lemon juice, beating until stiff peaks form.
  • Transfer to a piping bag and decorate the cooled cookies.
  • Allow the icing to set for 1-2 hours before serving or packaging.
