For the Gravy

  • 8 ounces mushrooms of choice, sliced (cremini recommended) Earthy and rich, adding umami.
  • 3 tablespoons butter, divided For cooking and maximizing flavor.

  • 2 cups beef broth The rich base for the gravy.

Preparation

  • Preheat your oven to 400°F (200°C). Prepare a large baking sheet by lining it with parchment paper or lightly greasing it with oil.
  • In a large bowl, combine the ground beef, panko breadcrumbs, egg, steak sauce, ketchup, Dijon mustard, onion powder, garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix until well combined but don’t overwork the meat.
  • Shape the mixture into meatballs about 1 to 1.5 inches in diameter, yielding 16 to 20 meatballs. Place them on the prepared baking pan.

Cooking

  • Bake for 16 to 20 minutes or until the meatballs are cooked through, reaching an internal temperature of 160°F (71°C).
  • While the meatballs are baking, melt 1 tablespoon of butter in a large skillet over medium-high heat. Add the sliced mushrooms and sauté until they are soft, about 3 to 5 minutes. Transfer the sautéed mushrooms to a plate, keeping the pan juices.
  • In the same skillet, melt the remaining butter over medium heat. Whisk in the flour to form a roux until it’s smooth and bubbly.
  • Slowly whisk in the beef broth, tomato paste, and Worcestershire sauce to create a rich gravy. Bring it to a simmer, stirring continuously until thickened, approximately 3 to 5 minutes.
  • Return the mushrooms to the pan. Add the baked meatballs into the gravy, cooking briefly until heated through.
  • Serve your gourmet meatballs generously coated with the rich mushroom gravy, garnished with fresh parsley if desired.

Notes

For a juicier meatball, avoid overmixing. Brown the meatballs in the skillet before baking for added flavor. Experiment with mushroom varieties, and adjust gravy thickness as desired. This dish is freezer-friendly and great for meal prep.
