Preparation

  • In a large mixing bowl, combine the lemon zest, lemon juice, olive oil, minced garlic, dried oregano, smoked paprika, sea salt, and black pepper. Whisk until well combined. Reserve 1/4 cup of the marinade for later.
  • Add the thin-sliced chicken to the marinade, ensuring every piece is thoroughly coated. Cover and refrigerate for at least 30 minutes.

Cooking

  • Heat a skillet over medium-high heat and add a splash of olive oil.
  • Place the marinated chicken in the skillet, cooking until golden brown on both sides and cooked through, about 5–7 minutes per side.

Serving

  • Transfer the chicken to a plate. Drizzle with the reserved marinade, then sprinkle feta cheese and fresh parsley on top. Serve with lemon wedges.

Notes

For best flavor, marinate the chicken for up to 4 hours or overnight. Consider adding a pinch of red pepper flakes for heat. Serve on a rustic board or colorful platter for an impressive presentation.
