For the Cooking

Instructions
 

Preparation

  • In a large mixing bowl, combine the ground beef, finely grated onion, uncooked arborio rice, chopped parsley, chopped dill, egg, dried oregano, salt, and black pepper. Use your hands to gently mix everything together until just combined.
  • Shape the mixture into golf ball-sized meatballs and chill them in the refrigerator for 15-20 minutes.

Cooking

  • In a wide pot, pour in the chicken broth and olive oil, bringing it to a gentle simmer over medium heat.
  • Carefully add the chilled meatballs to the simmering broth. Cover the pot with a lid and reduce the heat to low, allowing them to simmer for approximately 30 minutes.
  • While the meatballs are cooking, prepare the lemon sauce by whisking together the 2 eggs and lemon juice in a separate bowl. Temper the egg mixture by gradually adding hot broth while whisking continuously.
  • Pour the tempered egg mixture back into the pot with the meatballs and stir gently over very low heat.
  • Serve the meatballs in the bright lemon sauce, garnished with additional chopped dill or lemon wedges.

Notes

To enhance flavor, sauté the onion in olive oil before mixing. Feel free to experiment with spices like paprika or crushed red pepper for heat. Substitute ground turkey for beef if desired. A sprinkle of feta cheese on top adds a delightful salty flavor.
