Instructions
 

Preparation

  • Preheat your grill to medium-high heat.
  • Toss the chicken breasts with olive oil, salt, and pepper until nicely coated.

Cooking

  • Place the chicken on the grill and cook for 6-7 minutes on each side, or until they reach an internal temperature of 165°F.
  • While the chicken is grilling, bring a pot of water to a boil and add the broccoli. Blanch for 2-3 minutes, then drain.

Serving

  • In serving bowls, divide the cooked quinoa or brown rice.
  • Slice the cooked chicken and place it atop the grains. Add the blanched broccoli and drizzle with creamy garlic sauce.

Notes

For enhanced flavor, marinate the chicken for at least 30 minutes. Roasting the broccoli at 425°F for 15-20 minutes adds crunch. Garnish with sesame seeds or substitute sauce for a vegan option.
