Ingredients
  

For the Salmon

  • 4-6 ounce salmon fillets, fresh and flaky
  • 2 tablespoons soy sauce or coconut aminos for that umami kick
  • 1 tablespoon maple syrup or brown sugar adding a hint of sweetness
  • 2 tablespoons olive oil enriching the marinade and enhancing flavor
  • 2 tablespoons lime juice from about 1 lime, for fresh acidity
  • 2 cloves crushed garlic or 1 teaspoon garlic powder, lending depth to the dish
  • 1/2 teaspoon kosher salt for seasoning
  • 2 teaspoons Tajin a zesty seasoning for a flavorful twist
  • 1 teaspoon paprika adding warmth and color
  • 1 teaspoon chili powder giving it a gentle kick

For the Mango Salsa

  • 1 large ripe avocado, diced offering creaminess
  • 1 large mango, diced bursting with sweetness
  • 1/2 medium red bell pepper, diced small for crunch
  • 2 tablespoons finely chopped cilantro introducing freshness
  • 1/2 medium jalapeño, seeded and minced for an extra spice hit
  • 1/4 cup finely diced red onion enhancing the salsa’s flavor
  • 2 tablespoons fresh lime juice from about 1 lime, for the salsa
  • 1/2 teaspoon kosher salt to taste

Instructions
 

Preparation

  • In a large bowl, whisk together soy sauce, olive oil, maple syrup, lime juice, garlic, and spices to create the marinade.
  • Place the salmon fillets in the marinade and ensure they are well coated. Cover and refrigerate for at least 20 minutes.
  • In a mixing bowl, combine diced avocado, mango, red bell pepper, chopped cilantro, minced jalapeño, and red onion to prepare the mango salsa.
  • Toss gently to combine, then season with lime juice and salt.

Grilling

  • Preheat the grill to medium-high, approximately 400-450°F.
  • Brush the grill grates with oil to prevent sticking.
  • Place the marinated salmon fillets skin-side down on the grill. Grill for about 5-7 minutes, then flip carefully.
  • Continue grilling until the internal temperature reaches 135-140°F, and the salmon should have beautiful grill marks.

Serving

  • Remove the salmon from the heat and let it rest for a minute.
  • Serve the salmon topped with a generous amount of mango salsa.
  • For an extra treat, serve on a bed of coconut rice.

Notes

For an intense flavor, marinate the salmon overnight. Use cedar planks on the grill for a smoky flavor. Taste the salsa before serving and adjust sweetness with sugar or acidity with lime juice. Leftover mango salsa can be used as a dip or on tacos.
