Zucchini Boats

  • 4 medium medium zucchinis Fresh and bright green
  • 1 pound lean ground turkey (90% lean) Protein-rich filling
  • 1 small onion, diced Adds sweetness to the filling
  • 2 cloves garlic, minced Aromatic flavor

Seasoning and Toppings

  • 1 packet taco seasoning For enhancing flavor
  • 1 cup diced tomatoes Can be canned or fresh

Preparation

  • Preheat your oven to 375°F (190°C).
  • Slice the zucchinis in half lengthwise and scoop out the seeds to create boats. Place them in a baking dish.

Cooking

  • In a skillet over medium heat, cook the diced onion until translucent.
  • Add the minced garlic and ground turkey, cooking until the meat is browned.
  • Stir in the taco seasoning, diced tomatoes, salt, and pepper. Cook for an additional 5 minutes.
  • Fill each zucchini boat generously with the turkey mixture and top with shredded cheese.
  • Bake in the oven for about 25 minutes or until zucchinis are tender and the cheese is bubbly.

Notes

For healthier alternatives, you can substitute ground turkey with ground chicken or use a plant-based protein. Consider serving with Greek yogurt or guacamole for added richness.
