Instructions
 

Preparation

  • Preheat your oven to 160C/325F.
  • Heat olive oil in a Dutch oven or heavy-based pan over medium-high heat.
  • In a bowl or bag, combine the beef chunks with flour, salt, and pepper, tossing until well coated.
  • Add the beef to the hot pan, cooking for about 6-8 minutes until browned on all sides.
  • Stir in the minced garlic and cook for an additional minute to release its flavors.

Cooking

  • Pour in the Guinness and beef stock, bringing the mixture to a boil.
  • Once boiling, reduce heat slightly, cover the pan, and transfer it to the oven.
  • Allow it to cook for three hours, checking once an hour and adding a little water if it looks too dry.
  • After three hours, add the chopped bell peppers and zucchini, cover, and cook for an additional five minutes.

Serving

  • To serve, sprinkle with grated parmesan, chopped parsley, and red onion over the hot stew.
  • Pair with warm couscous for a complete meal.

Notes

For enhanced flavor, allow the beef to sear properly. Marinate beef in ale for deeper flavor if time permits. Add red pepper flakes for a spicy kick. Experiment with additional vegetables like carrots or mushrooms. Don't skip garnishes.
