  • Heavy-duty aluminum foil Required for wrapping the packets.

Preparation

  • Preheat your grill to medium-high or your oven to 400°F (200°C).
  • Cut 4 large sheets of heavy-duty aluminum foil and drizzle each with a touch of olive oil to prevent sticking.
  • Place one chicken breast in the center of each foil sheet, seasoning generously with salt and pepper.
  • Add pineapple chunks, red bell pepper slices, and red onion atop each chicken piece.
  • Spoon your favorite BBQ sauce over the chicken and veggies.
  • Fold the foil over, sealing tightly to create a steaming packet.
  • Grill for 20-25 minutes or bake for 25-30 minutes, until the chicken reaches an internal temperature of 165°F.
  • Carefully open your packets, let the steam escape, garnish with fresh herbs, and serve hot.

Notes

Avoid overbaking the chicken to prevent a dry texture. Ensure packets are sealed tightly to retain moisture.
