  • Mix until just combined, avoiding over-mixing to retain fluffiness.
  • Fold in shredded coconut and chopped pecans, if using.
  • Pour the batter into the prepared baking dish and smooth the top.
  • Bake for 30-35 minutes, until a toothpick comes out clean.

Frosting Preparation

  • In a mixing bowl, beat together the softened cream cheese and butter until smooth and creamy.
  • Gradually incorporate the powdered sugar and vanilla extract.
  • Add milk one tablespoon at a time until the frosting reaches the desired consistency.
