  • 1 lb ground beef Browned and drained
  • 1 can (15 oz) diced tomatoes Canned
  • 1 can (15 oz) corn Drained
  • 1 can (15 oz) pinto beans Drained and rinsed
  • 1 can (15 oz) diced potatoes Canned
  • 1 small onion, diced Fresh
  • 2 cups beef broth Canned or homemade

Spices

  • 1 tsp chili powder To taste
  • 1 tsp garlic powder To taste
  • 1/2 tsp smoked paprika To enhance flavor
  • to taste Salt and pepper Adjust as needed

Instructions
 

Preparation

  • Brown the ground beef in a skillet over medium heat, then drain excess fat.
  • Combine the browned beef, diced tomatoes, drained corn, pinto beans, diced potatoes, chopped onion, and beef broth in the crock pot.
  • Sprinkle in chili powder, garlic powder, smoked paprika, and season with salt and pepper. Stir well.

Cooking

  • Cover the slow cooker and set to cook on low for 6–8 hours or on high for 3–4 hours.
  • Stir the soup before serving and adjust seasonings if necessary.

Serving

  • Ladle the soup into bowls and enjoy it warm, optionally garnishing with cheese, sour cream, or fresh herbs.

Notes

Consider adding chopped green bell peppers or jalapeños for extra freshness. This soup can easily accommodate various types of beans for diversity and can be made vegetarian by substituting ground beef with lentils or plant-based meat.
