Instructions
 

Preparation

  • Preheat your oven to 325°F (163°C) and line a 12-cup muffin tin with cupcake liners.
  • In a medium bowl, combine the graham cracker crumbs, 1/4 cup of sugar, and melted butter. Mix thoroughly and press into the bottom of each liner to form a crust.
  • Bake the crust for 10 minutes, then remove from the oven and let cool.

Filling

  • In a separate bowl, beat the cream cheese and 1/2 cup of sugar until smooth.
  • Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  • Once the crusts are cool, pour the cream cheese mixture over them, filling each almost to the brim.
  • Bake for 18-20 minutes until the tops are slightly golden and set. Let cool completely on a wire rack.

Topping

  • Whip the heavy cream with powdered sugar and lemon juice until stiff peaks form.
  • Spoon the whipped cream over each cheesecake and garnish with fresh raspberries. Drizzle with raspberry jam if desired.
  • Chill the cupcakes in the refrigerator for at least 2 hours before serving.

Notes

Ensure cream cheese is at room temperature for a smoother filling. Use chilled bowls and beaters when whipping cream for better volume. Can be frozen for up to three months.
