Instructions
 

Make the White Chocolate Mousse

  • Place the chopped white chocolate into a heatproof bowl. Set it over a saucepan of simmering water or heat it in a microwave at 30-second intervals, stirring until smooth. Allow the chocolate to cool slightly.
  • In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold in the cooled white chocolate and vanilla extract until just combined.

Prepare the Raspberry Layer

  • In a small saucepan, combine the fresh raspberries, sugar, and lemon juice. Cook over low heat, stirring until the raspberries become soft and slightly syrupy. Remove from heat and let cool.

Assemble the Parfait

  • In serving glasses, layer crushed graham crackers, raspberry mixture, and white chocolate mousse. Repeat layers and finish with mousse on top.
  • Chill the parfaits in the refrigerator for at least 2 hours.
