Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
  • In a medium bowl, whisk together flour, baking powder, baking soda, and salt until well combined.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  • Pour in the crushed pineapple and milk, mixing until well combined. Gradually fold in the dry ingredients, stirring gently to avoid overmixing. Finally, add melted white chocolate chips.

Baking

  • Divide the batter evenly between prepared cake pans and smooth the tops. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  • Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

Frosting

  • In a medium bowl, beat together cream cheese and powdered sugar until smooth. Add heavy cream and vanilla extract, and beat until the frosting thickens.
  • Fold in melted white chocolate chips for added richness.

Assembly

  • Once the cakes are completely cooled, spread frosting on top of one layer. Place the second layer on top and frost the entire cake with the remaining frosting.
