Main Ingredients

  • 8 medium-sized Lamb Chops Tender cuts that soak up the marinade beautifully.

Preparation

  • Process or blend the red bell pepper, fresh parsley, and garlic into a coarse mixture to create the marinade base.
  • Divide the lamb rack into 8 chops using a chopping board.
  • In a mixing bowl, combine the lamb chops with the bell pepper mixture and the remaining ingredients.
  • Massage the marinade into the meat and let it marinate in the refrigerator for about 1 hour.
  • Bring the chops to room temperature before cooking.

Cooking

  • Preheat oven to 400°F (200°C) and heat about 2 tablespoons of olive oil in a cast iron skillet over medium heat.
  • Sear each lamb chop for 1-2 minutes on both sides to create a golden crust.
  • Transfer the seared chops back to the skillet without overlapping and place in the preheated oven.
  • Bake for 2-5 minutes for medium rare to medium, or 5-10 minutes for well done.
  • Serve the herbaceous lamb chops garnished with fresh parsley.

Notes

For a richer flavor, consider adding balsamic vinegar or Dijon mustard to the marinade. Allow the meat to rest for minutes after cooking for better texture.
