Instructions
 

Preparation

Mixing

  • In another bowl, whisk together the eggs, olive oil, garlic powder, onion powder, black pepper, salt, and oregano until well blended and slightly frothy.
  • Pour the egg mixture over the vegetable medley and stir gently until everything is well coated.

Baking

  • Transfer the mixture into the greased baking dish, spreading it out evenly.
  • Sprinkle the shredded mozzarella cheese over the top.
