Base Ingredients

  • 2 cups heavy cream Use high-quality for a richer flavor.
  • 1 cup whole milk For a creamy texture.
  • 3/4 cup granulated sugar To sweeten the ice cream.
  • 1 teaspoon vanilla extract Enhances the flavor.
  • 1 cup Baileys Irish Cream Omit for a non-alcoholic version.
  • 1/4 cup cocoa powder Adds a rich chocolate flavor.

Instructions
 

Preparation

  • In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat, stirring occasionally, until the sugar is dissolved. Do not boil!
  • In a small bowl, whisk the cocoa powder with a small amount of the warm milk mixture until smooth, then add it back into the saucepan and stir to combine.
  • Remove from heat and add the vanilla extract and Baileys. Mix until well combined.
  • Allow the mixture to cool to room temperature. Transfer to the refrigerator and chill for at least 2 hours, or overnight for optimal flavor.

Churning

  • Once chilled, pour the mixture into an ice cream maker and churn following the manufacturer's instructions, typically for about 20-25 minutes.
  • Transfer to an airtight container and freeze for at least 4 hours or until firm.

Serving

  • Serve in elegant dessert bowls topped with shaved chocolate or cocoa powder, or enjoy with warm brownies or chocolate cake.

Notes

For a creamier texture, use high-quality cocoa powder. You can mix in chopped chocolate or nuts during the last few minutes of churning for added texture. To maintain consistency, consider using an insulated container when freezing.
