Preparation

  • In a medium bowl, combine the sliced strawberries with the granulated sugar. Toss gently to coat the strawberries evenly and let the mixture sit for 10-15 minutes.
  • Add the lemon juice and vanilla extract to the strawberry mixture. If using cornstarch, dissolve it in the water and add it to the bowl.

Cooking

  • Transfer the strawberry mixture to a saucepan. Cook over medium heat for about 5-7 minutes, stirring gently until the mixture thickens and the strawberries soften.
  • Once desired thickness is achieved, remove the saucepan from heat and let the topping cool completely.
  • Spoon the homemade strawberry topping over cheesecake and serve.
