Honey Walnut Shrimp Delight

Ingredients
  

For the shrimp

  • 1.5 pounds extra-large or jumbo shrimp Peeled and deveined
  • 4 large egg whites Whisked until frothy
  • 1/4 cup panko breadcrumbs
  • 2 tablespoons cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon white pepper
  • Vegetable oil for frying For frying the shrimp
  • 1/4 cup sliced green onions Optional garnish

For the sauce

  • 1/2 cup mayonnaise
  • 1/4 cup heavy cream
  • 2 tablespoons honey
  • 1 tablespoon lemon juice

For the glazed walnuts

  • 1 cup walnuts
  • 1 cup brown sugar
  • 1/2 cup water

Instructions
 

Prepare the Honey Walnut Sauce

  • In a mixing bowl, thoroughly combine the mayonnaise, heavy cream, honey, and lemon juice until smooth.

Prepare the Shrimp

  • Peel and devein the shrimp.
  • In a medium bowl, whisk the egg whites until frothy.
  • In another bowl, combine panko breadcrumbs, cornstarch, garlic powder, salt, and white pepper.
  • Dip each shrimp into the egg white mixture, then coat with the dry mixture.

Fry the Shrimp

  • Heat vegetable oil in a large pot to 350°F.
  • Fry the shrimp in small batches for 2-3 minutes or until golden brown.
  • Drain the shrimp on paper towels.

Prepare the Glazed Walnuts

  • Combine walnuts, brown sugar, and water in a saucepan and bring to a boil.
  • Cook for around 5 minutes until the sugar dissolves.
  • Strain the walnuts and cool on parchment paper.

Combine and Serve

  • Toss the fried shrimp with the honey walnut sauce until coated.
  • Serve on a platter, topped with glazed walnuts and green onions.

Notes

For additional crunch, add fried shallots or sesame seeds. For a spicy twist, add sriracha to the sauce. Use coconut oil for frying for a unique flavor. Pair with steamed jasmine rice for a complete meal.
