  • 2 cups mashed potatoes (prepared and cooled)
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1/4 cup all-purpose flour

Seasonings

  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • to taste Salt and pepper
  • 2 tbsp chopped fresh parsley

Coating

  • 1/4 cup breadcrumbs
  • as needed Oil for frying

Preparation

  • Gather all your ingredients.
  • In a large mixing bowl, combine the prepared and cooled mashed potatoes, shredded cheddar cheese, grated Parmesan cheese, eggs, flour, garlic powder, onion powder, and a pinch of salt and pepper. Mix until well combined.
  • Stir in the chopped fresh parsley.
  • Using your hands, form the mixture into small puffs about 1-inch in size. Roll them gently to maintain their shape.
  • Roll each puff in breadcrumbs to coat evenly.

Cooking

  • In a deep frying pan, heat oil over medium heat.
  • Carefully add the puffs in batches and fry them for 3–4 minutes until golden brown and crispy on all sides.
  • Remove the puffs from the oil and let them drain on a paper towel.
  • Serve hot with a dipping sauce of your choice.

Notes

For added flavor, consider mixing in crispy bacon bits or minced green onions. For a healthier option, bake the puffs at 400°F for about 20 minutes instead of frying.
