Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a small bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated.
  • Press the crumb mixture into the bottom of mini cupcake liners or silicone molds to form the crust. Bake for 8-10 minutes or until the crust is golden. Once finished, set aside to cool.
  • In a separate bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy.
  • Add the vanilla extract and mix well to incorporate the flavors.
  • In another clean bowl, whip the chilled heavy cream until stiff peaks form. Gently fold this whipped cream into the cream cheese mixture.
  • Stir in the finely chopped fresh strawberries, ensuring they are evenly distributed throughout the filling.
  • Spoon or pipe the cheesecake filling onto the cooled crusts, dividing it evenly.
  • Top with mini chocolate chips and garnish with sliced strawberries.

Chilling

  • Refrigerate for at least 2 hours before serving.

Notes

For the best results, use room temperature cream cheese. Consider adding lemon zest for a refreshing twist. You can experiment with different fruits.
