For the Beef Tenderloin

  • 4-5 lbs beef tenderloin, trimmed to perfection
  • 2 tablespoons olive oil, for a beautiful sear
  • 1 tablespoon kosher salt, enhancing the meat’s natural flavors
  • 1 teaspoon freshly ground black pepper, adding subtle heat
  • 4 cloves garlic, minced, for aromatic depth
  • 2 tablespoons fresh rosemary, chopped, bringing a fragrant herbal note
  • 2 tablespoons fresh thyme, chopped, for added earthiness
  • 1/4 cup Dijon mustard, lending a tangy bite
  • 1/4 cup unsalted butter, softened, for richness
  • 1/4 cup heavy cream (optional), for a richer sauce

Instructions
 

Preparation

  • Preheat your oven to 450°F (230°C).
  • Pat the beef tenderloin dry with paper towels. Rub the entire roast with olive oil and season generously with kosher salt and freshly ground black pepper.
  • In a small bowl, combine minced garlic, chopped rosemary, and thyme, and rub the mixture all over the beef tenderloin.

Searing

  • Heat a large oven-safe skillet over medium-high heat and sear the beef tenderloin on all sides for 3-4 minutes each.

Roasting

  • Remove the skillet from heat and brush the tenderloin with Dijon mustard. Transfer the skillet to the preheated oven and roast for 25-30 minutes.
  • Once done, cover the beef loosely with foil and let it rest for 10-15 minutes.

Sauce Preparation

  • While the beef is resting, melt butter in the same skillet over medium heat. If using heavy cream, add it now and simmer for 2-3 minutes.

Serving

  • Slice the beef into 1-inch thick slices, drizzle with the buttery sauce, and serve immediately.

Notes

For deeper flavor, marinate the beef overnight with the herb mixture. For a crispier crust, finish under the broiler for a few minutes. Consider adding lemon juice or sautéed mushrooms for additional flavor.
