Preparation

  • Preheat your oven to 325°F (165°C).
  • In a medium bowl, mix together the graham cracker crumbs, 1/3 cup white sugar, and melted butter until well combined.
  • Press the crumb mixture into the bottom of a 9-inch springform pan to create a firm crust.
  • In a large bowl, beat together the softened cream cheese, 1 cup white sugar, flour, key lime juice, lime zest, and vanilla extract until smooth and creamy.
  • Add the eggs one at a time, mixing just until blended after each addition.
  • Stir in the sour cream until just combined.
  • Pour the filling over the prepared crust in the springform pan, smoothing the top with a spatula.

Baking

  • Bake for 55-60 minutes, or until the center is set but has a slight wobble.
  • Turn off the oven, crack the oven door open slightly, and let the cheesecake cool in the oven for 1 hour.
  • After an hour, remove the cheesecake from the oven and place it on a wire rack to cool completely.
  • Once cooled, refrigerate the cheesecake for at least 4 hours, but overnight is best.

Notes

For the best flavor, use fresh key limes when available. Add a pinch of salt to your crust mixture for enhanced flavors. Serve with whipped cream or fresh lime slices for garnish.
