Instructions
 

Preparation

  • In a large pot or Dutch oven, cook the ground beef (or sausage) over medium heat until browned. Drain excess fat if necessary.
  • Add the chopped onion and minced garlic to the pot. Sauté for about 3-4 minutes, until softened and fragrant.
  • Stir in the crushed tomatoes, beef broth, water, tomato paste, oregano, basil, red pepper flakes (if using), salt, and pepper. Bring this mixture to a simmer over medium-high heat.
  • Once simmering, add the broken lasagna noodles. Cook for 8-10 minutes, or until noodles are tender.
  • In a small bowl, mix together the ricotta, mozzarella, and Parmesan cheese. Set aside.
  • Ladle the soup into bowls and top with a spoonful of the cheesy mixture. Stir to combine and garnish with fresh basil or parsley.

Notes

Leftover soup can be stored in an airtight container for up to three days. For longer storage, freeze for up to three months.
