Instructions
 

Preparation of Red Velvet Layer

  • Preheat your oven to 325°F (163°C).
  • In a mixing bowl, combine graham cracker crumbs, cocoa powder, sugar, and melted butter until well incorporated.
  • Press this mixture firmly into the bottom of a 9-inch springform pan.
  • In another bowl, beat cream cheese and powdered sugar together until smooth.
  • Add the heavy cream, red food coloring, and vanilla extract, mixing until homogeneous.
  • Pour the red velvet mixture over the prepared crust and smooth out the top.
  • Bake for 30 minutes, then cool completely before the next layer.

Preparation of White Chocolate Layer

  • Melt chopped white chocolate in a microwave-safe bowl, stirring in 30-second intervals until smooth.
  • Allow the chocolate to cool slightly.
  • In a separate bowl, beat cream cheese and powdered sugar together until creamy.
  • Add the melted white chocolate and vanilla extract, mixing until well combined.
  • Whip heavy cream to stiff peaks then gently fold into the white chocolate mixture.
  • Spread the white chocolate layer over the fully cooled red velvet layer.
  • Chill in the refrigerator for at least 4 hours, preferably overnight.

Notes

Ensure cream cheese is at room temperature for smooth mixing. Allow cheesecake to chill overnight for enhanced flavor.
