For the blueberry topping

  • 2 cups fresh blueberries Sweet and juicy.
  • 1/4 cup sugar Sweetens the blueberries.
  • 1 tbsp lemon juice Enhances blueberry flavor.
  • 1 tsp cornstarch (optional) For a thicker sauce.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter.
  • Stir until the mixture resembles wet sand and press it into the bottom of a 9x9-inch pan.
  • Bake for 8-10 minutes or until golden brown and cool completely.

Cheesecake mixture

  • In a large bowl, beat the softened cream cheese and powdered sugar until smooth, about 2-3 minutes.
  • Add the vanilla extract, lemon zest, and lemon juice, mixing until well combined.
  • In a separate bowl, whip the heavy cream until stiff peaks form.
  • Fold the whipped cream into the cream cheese mixture until fully incorporated.

Assembly and chilling

  • Spread the cheesecake mixture evenly over the cooled graham cracker crust.
  • Cover with plastic wrap and refrigerate while preparing the blueberry topping.
  • In a small saucepan, combine blueberries, sugar, and lemon juice over medium heat.
  • Allow to simmer and add cornstarch mixed with water if a thicker sauce is desired.
  • Let blueberry topping cool to room temperature.
  • Once cooled, spoon it over the cheesecake layer and chill for at least 4 hours or overnight.
  • Slice into squares and enjoy.

Notes

For a more intense lemon flavor, increase lemon juice and zest. Consider adding chopped pecans or almonds to the crust for a touch of crunch. You can substitute the blueberries for other berries as well.
