  • 2 teaspoons lemon zest for flavor enhancement
  • 1 teaspoon vanilla extract to elevate the flavors
  • 2 cups all-purpose flour creates the cookie base
  • 1/4 teaspoon salt balances sweetness

Filling and Topping

  • 1/2 cup lemon curd for filling
  • 1/4 cup granulated sugar for brûlée topping

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together the softened butter, powdered sugar, lemon zest, and vanilla extract until fluffy and well combined.
  • Gradually mix in the all-purpose flour and salt until a soft dough forms, ensuring not to overmix.

Cookie Shaping

  • Scoop the dough into balls, about one tablespoon each, and flatten them slightly.
  • Using your thumb or the back of a spoon, create a small well in the center of each cookie.
  • Transfer the cookie dough onto the lined baking sheet, spacing them out properly to allow for spreading during baking.

Baking

  • Bake the cookies for 10–12 minutes or until the edges are lightly golden brown.
  • Allow the cookies to cool completely before filling the center with lemon curd.
  • Sprinkle granulated sugar over each cookie and use a kitchen torch to brûlée the sugar until caramelized and crisp.

Serving

  • Let the cookies set for a few minutes before serving.
  • Pair with iced tea, lemonade, or herbal tea for a delightful experience.

Notes

To enhance flavor, consider adding additional citrus zest or white chocolate chips. For a healthier option, use coconut or almond flour and substitute honey for sugar. If you don’t have a kitchen torch, broil the cookies briefly but monitor closely to prevent burning.
