Instructions
 

Preparation

  • Preheat your oven to 325°F (165°C).
  • In a small bowl, combine the graham cracker crumbs with melted butter until evenly coated. Press this mixture firmly into the bottom of your springform pan to form a crust.
  • Bake for 10 minutes until golden, then set aside to cool completely.
  • In a large bowl, use an electric mixer to beat together the softened cream cheese, mascarpone cheese, powdered sugar, sour cream, lemon and lime zest, lemon and lime juice, and vanilla extract until smooth and creamy.

Mixing

  • In another bowl, whip the heavy cream until stiff peaks form.
  • Carefully fold the whipped cream into the cream cheese mixture, ensuring not to deflate the whipped cream.
  • Pour the cheesecake filling over the cooled graham cracker crust and smooth the top.

Setting

  • Refrigerate the cheesecake for at least 4 hours or ideally overnight.

Topping

  • In a small saucepan, combine the fresh cherries and sugar. Cook over low heat for 5-7 minutes until cherries soften and release their juices, then allow to cool.
  • Once the cheesecake has set, pour the cherry syrup over the top and sprinkle with chopped pistachios.
