Ingredients
  

For the crust

Preparation

  • Preheat your oven to 325°F (163°C) and prepare a 9-inch springform pan by greasing and lining it with parchment paper.
  • In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined and press into the bottom of the pan.
  • Bake the crust for about 10 minutes, then set aside to cool.
  • In a large mixing bowl, beat cream cheese with granulated sugar until smooth, about 3 minutes.
  • Add vanilla extract, lime juice, and lime zest to the cream cheese mixture. Blend well and add eggs one at a time, beating well after each addition.
  • Pour the cheesecake batter into the cooled crust and smooth the top. Bake for 45-50 minutes until the center is slightly jiggly.
  • Turn off the oven and leave the cheesecake inside with the door ajar for one hour. Then refrigerate for at least 4 hours, preferably overnight.

Making the mousse

  • In a chilled bowl, whip heavy cream with powdered sugar until stiff peaks form.
  • Gently fold in fresh lime juice and lime zest.
  • Spread the lime mousse evenly over the chilled cheesecake.

Finishing touches

  • For the glaze, mix together fresh lime juice and powdered sugar until smooth.
  • Drizzle the glaze over the lime mousse layer and garnish with extra lime zest or slices, if desired.
  • Serve chilled and enjoy!
