For the Fries

  • 4 large russet potatoes, cut into thick, crunchy fries
  • 2 tbsp olive oil for that glossy finish
  • 2 tsp Cajun seasoning infused with herbs and zest
  • 1 tsp garlic powder that brings a savory depth
  • 1/2 tsp paprika for a smoky touch
  • 1/4 tsp black pepper freshly ground for bite
  • 1 tsp salt to enhance all flavors
  • 1 tbsp chopped fresh parsley for a pop of color
  • 1/4 tsp cayenne pepper optional for extra heat

For the Voodoo Sauce

  • 1/2 cup mayonnaise creamy and rich
  • 2 tbsp ketchup sweet and tangy
  • 1 tbsp hot sauce adjust based on spice preference
  • 1 tsp Dijon mustard for a slight kick
  • 1 tsp lemon juice refreshing zest
  • 1/2 tsp smoked paprika deepening the flavor profile
  • 1 clove garlic, minced for a punch of freshness

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C). Wash the russet potatoes thoroughly and cut them into fries.
  • Pat the fries dry with a paper towel to achieve a crispy texture.

Cooking

  • In a large mixing bowl, toss the cut fries with olive oil until fully coated.
  • Sprinkle in Cajun seasoning, garlic powder, paprika, black pepper, and salt, tossing to coat evenly.
  • Spread seasoned fries on a baking sheet lined with parchment paper. Bake for 30-35 minutes, flipping halfway through.
  • While fries are baking, prepare the voodoo sauce by mixing mayonnaise, ketchup, hot sauce, Dijon mustard, lemon juice, smoked paprika, and minced garlic.
  • Once fries are golden brown, transfer them to a serving platter and drizzle the voodoo sauce over the top or serve it on the side.

Serving

  • Finish with a sprinkle of chopped fresh parsley and serve hot.

Notes

For extra crunch, soak cut potatoes in cold water for at least 30 minutes before baking. Leftover fries can be reheated in the oven or air fryer for best results.
